1 cup Pink Lady apples, peeled and chopped
1 cup walnuts, chopped
2 eggs
1 cup brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
2 teaspoons vanilla extract
1/2 teaspoon salt
Preheat the oven to 350°F and grease a 10-inch pie plate. Set aside.
In a medium bowl, mix together the flour, baking powder, salt, and set aside.
In a separate bowl, using an electric mixer, beat together the eggs and sugar until fluffy. Stir in the dry ingredients. Add the vanilla, chopped nuts, and apples, and stir to combine.
Spoon batter into prepared pie dish and bake 30-35 minutes. Serve with ice cream and chopped nuts, if desired. Enjoy!
